Pot Luck Recipes

Good morning! I just came in from having a cup of coffee on the porch. The birds were singing and the rain was softly falling. What a beautiful way to start the weekend!

I almost forgot that I told you I would share a couple of my favorite recipes. Please note that the photo above has nothing to do with this post. I just liked it!

Caramel Apple Salad (or Snicker Salad)
2 small boxes of instant vanilla pudding
3 cups milk
1 8oz. container Cool Whip
3 Granny Smith apples
3 Snickers bars

Mix the pudding and milk until thickened. Fold in Cool Whip. Cut the apples (unpeeled) and Snickers into small pieces and stir into pudding mixture. Refrigerate until ready to serve. This is best eaten the day you make it. Yummy! It is really like a dessert, but if you call it a salad it sounds a lot healthier!

Corn Dip

1 can yellow corn (drained)

1 can shoe peg (white) corn (drained)

1 can Rotel

1 can chopped green chilies

1 8oz. bar of cream cheese

1 tsp. garlic powder

1 tsp. cumin

1 tsp. chili powder

The recipe says to mix all ingredients and bake at 350° until bubbly. I put everything in my crockpot. Also, I usually add some shredded cheddar cheese. Serve with Fritos or tortilla chips.

I have no idea why blogger formatted those two recipes different. I also have no idea how to fix it. Things like that drive me crazy. Hubby is still sleeping or I would have him fix it. Oh, well.

I think I will head to town to see if there are any garage sales. May not be too many since it is a holiday weekend. This afternoon we are going to some friends for a crawfish boil. The boys are excited. I'm looking forward to spending time with friends. The crawfish - not so much.

Resurrection Rolls

Hello! Crazy week again. I've been busy trying to get ready for Easter. Sweet Girl's dress is done except for hemming. I am pleased with how it turned out and will share pictures after Easter. Now I've just got to figure out what I am going to wear. Growing up I always had a new dress for Easter and I still like to do that. It may be a thrifted dress, but it will still be new to me.

I meant to get this recipe posted earlier in the week. You know how that goes. These are an Easter morning tradition at our house. They are yummy and serve as a good teaching tool for the kiddos.

Resurrection Rolls

Place 20 frozen rolls in a greased pan and let them thaw.

When thawed, press rolls flat and place a marshmallow in the center. (Please ignore the nasty countertops. These were taken in the rental house last year.)

Pull roll up over the marshmallow and pinch edges closed.
Cover and let rise for at least 30-45 minutes. Some of the rolls may come undone. Just pinch them back together.
Brush with butter and sprinkle with cinnamon sugar. Bake for 15 minutes at 350° .
These are best when served warm.
Do you know why they are called Resurrection Rolls? Because they look like the empty tomb!


Resurrection Rolls
20 Frozen Rhodes Rolls
20 large marshmallows
1/4 cup melted butter
6 T. sugar
1 t. cinnamon

Place rolls in a greased 9x13 pan; let thaw. Press rolls flat. Place marshmallow in center; pinch edges of roll together to enclose marshmallow. Let rise 30-45 minutes. Brush with melted butter and sprinkle with cinnamon and sugar. Bake at 350° for 15 minutes or until light brown. Serve warm. (Warning: the marshmallow turns to liquid and is gooey. Don't dress your kids in their Easter clothes before eating!)

Easiest-Ever Pumpkin Muffins

Good evening! It has been a beautiful fall day and I just wanted to share one of my family's favorite fall treats. Actually, I posted this recipe last year, but it is definitely worth posting again. And this time you get pictures!
Easiest-Ever Pumpkin Muffins
The ingredients: one spice cake mix and one can of pumpkin. That's it!

Preheat oven to 350 degrees.
Mix the cake mix and pumpkin together in a bowl. I do it by hand, but you can use an electric mixer if you want.
The batter will be pretty thick.
Spray muffin tins with cooking spray (or use paper liners) and fill about 2/3 full. This recipe will make 12-15 regular size muffins.
I actually made 12 regular size and 9 mini muffins tonight. Bake at 350 for 15 minutes or until toothpick comes out clean. Decrease the time a bit if you are making minis.
These are a great thing to make if you need something quick for a potluck or brunch. I always try to keep the cake mix and pumpkin on hand for "emergencies." My kids love these!
Delicious fresh out of the oven with melted butter. Oh, you can add chopped nuts to the batter if you would like.
Soon, all you will have left is crumbs! Enjoy!

I am off to Jefferson, TX in the morning. Some gals from church are doing a "girls day out." We will be hitting all the local antique stores and flea markets. Maybe we will even find some garage sales and thrift stores. I'm just excited about getting away for a day. Maybe I will have some fun treasures to share with you when I return.
